What are the key Bioactive compounds in Carob
Here you can find the key bioactive compounds in Carob pods
- Polyphenols (Antioxidants) Gallotannins (a type of tannin), Gallic Acid,Flavonoids (e.g., Quercetin). These are powerful antioxidants that scavenge free radicals, which is why carob is highly effective in combating oxidative stress and cellular damage. Gallic acid, in particular, is noted for its strong anti-inflammatory and antimicrobial properties.
- Dietary Fiber Pectin, Hemicellulose (both soluble and insoluble fiber). Provides the digestive benefits. The high concentration of fiber aids in regulating intestinal transit and stool consistency. Soluble fiber acts as a prebiotic, feeding the beneficial gut flora and supporting a healthy gut biome.
- D-pinitol (a cyclitol). This compound is often studied for its role in glycemic management. It is recognized for its potential to support healthy blood sugar levels by mimicking some of the actions of insulin, reinforcing the claim of the product's low glycemic index.
- Minerals & Vitamins: Magnesium, Potassium, Calcium, Iron,B-vitamins (especially Riboflavin and Niacin). These are essential co-factors for energy metabolism. Magnesium and Potassium contribute to muscle and nerve function and help balance electrolytes, contributing to the feeling of calm, sustained energy without the jitters.
What about hormones?
Coffee and other stimulants can:
- raise cortisol (the stress hormone),
- trigger adrenaline,
- interfere with melatonin, making it harder to wind down if consumed late,
- and contribute to insulin spikes when combined with sugar.
Karobè, on the other hand:
- is caffeine-free and theobromine-free,
- has a low glycemic index,
- is generally gentler on your natural hormonal rhythms.
In simple terms: it’s a drink designed to support balance, not push your system into overdrive.
Note: this is general information, not medical advice. If you have a specific hormonal condition (thyroid, PCOS, etc.), always check with your healthcare professional.
What is the best way of making it?
We have tried nespresso reusable pods, french press, filtering it. They all have their differences, the one that we like the most is with a moka machine.
In this case karobè is prepared exaclty like ground coffee, making the Moka pot (or Italian coffeemaker) the ideal method for the authentic experience.
- Fill & Settle: Gently fill the Moka pot's filter basket with your Karobè grounds. Crucially, do not press or tamp the product; leave the grounds loose and light.
- Ignite the Calm: Place the Moka pot over a medium heat (around 6/10). This is where the ritual begins. Patience is key. Resist the urge to rush.
- Savor the Aroma: As the Karobè brews, an enveloping scent of caramel and toast will rise. Wait for the rich, dark liquid to fill the upper chamber.
- Serve & Ground: Remove from the heat, pour into your favourite cup, and take a moment. Enjoy the deep, toasted body, similar to a medium-roast coffee, with its own natural, gentle sweetness.

Is it true they used to call carob ‘St. John’s bread’? Why?
Yes, it’s true. Carob was known as St. John’s bread because, according to tradition, John the Baptist survived in the desert eating the pods of the carob tree.
That’s why in many Mediterranean cultures it became a symbol of nourishment and resilience. People used it in hard times, but not just as a last resort — it was valued because it could sustain you, naturally sweet and full of nutrients.
Today we bring that same tradition back with Karobè: not as survival food, but as a healthy, caffeine-free choice you can enjoy every day.
I’ve heard the word carat comes from carob seeds. Is that really true?
Yes — the carat we still use today to measure diamonds comes from the carob tree. In the past, traders noticed that carob seeds had a remarkably consistent weight, about 0.2 grams each.
Because of this natural precision, they used them as a reference to weigh gold and gemstones.
So carob is not only food — it’s a symbol of nature’s accuracy and balance, setting the very standard of value we trust to this day.
Does it taste like coffee?
No, its sweeter and healthier actually. It has a bitter touch, really soft that remembrance coffee but slightly.
Does it taste like chocolate?
No, some call it "fake chocolate", cause its sweet and can replace it but it's definitely not the same flavour.
What does it taste like then?
Karobè does not taste exactly like coffee, nor is it a cheap imitation. Instead, it offers a sophisticated profile of roasted notes and body similar to a medium coffee.
You will find hints of caramel, alongside subtle nuances of cereals and nuts. It has a natural, gentle sweetness, meaning you often won't need to add sugar.
What's karobè?

Karobè is the healthy evolution of coffee. It’s designed to provide the same ritual, comfort, and deep flavor you love, but without the adverse side effects.
You can brew it exactly like your usual coffee—ideally in a Moka pot (Italian coffeemaker)—maintaining the sense of routine and the delicious aroma.
This way, you keep your essential coffee moment, but trade the jitters and crashes for sustained, clean energy.
I want to quit coffee; will this transition be easy?
It will be easier than quitting cold turkey, as the ritual remains the same, it is enjoyable, and it adds natural polyphenols and healthy oils.
Quitting any addiction is difficult, but karobè provides a healthy, satisfying alternative.
It doesn't have foam like coffee, does it?
Not as much. The coffee foam comes from the oils that, together with the CO2 released in the roasting, create the foam.
It produces just a little bit of it giving a similar ritual without the issues from coffee.
